I don't know what good a camera shooting video from the bikes cockpit out the windscreen will do for theft prevention. How would it capture a thief's face or vehicle's license plate that way? I'd feel safer with a camera on a nearby building overlooking the parking area. And once they noticed it they'd be sure to rip it off or cover the lens with something, etc.
I do use a product from RAM Mounts called the stem-mount. I've had them on nearly every bike I've ridden since 2007. Work great, use the mount on the bike to hold my phone in a cradle, with an arm connecting the two. Longer arm allows you to move the camera into a TON of positions in the cockpit for nearly any view you desire (gauges in the video, or just the road, or the whole front half of the bike). I also use it for GPS and a visual text message warning so that I may reply at a stop light or fuel station.
Locking knob lets you leave it on the bike without worrying about prying hands. Although I don't see many folks coming up to your bike to take a device-specific phone holding apparatus... If I ever buy a GoPro I will use it with my RAM system in the stem, as well as buy some universal RAM ball mounts to put in various locations on the bike for a bunch of cool angles.
