Whats really fun is catching one on a good curvy road and pushing them till they get to their or the cars limits, then passing them and pulling away while they try to stay with you.
Had one not long ago, a new GT. We came up behind him a stop sign, he took off and I ran up behind him. I would back off a little before the corners (I knew he would have to brake for them) as soon as he was off the brakes I would close on him through the corner. After 3 or 4 corners he was pushing so hard he would get out of shape, I decided not to pass because I didn't know what his abilities were and the road was narrow. I could have easily shot by him at any time. We get to the end of the road, he was turning left and we were turning right. He made his turn and looked back out the window with a thumbs up, my wife waved to him. He just stopped in the road and looked waving back, I guess he was shocked to see we were two up. Alot of fun sometimes.
Just remember there's a time and place for everything. You can never completely eliminate the risk but you can reduce them drastically. Ride safe.
