You could use a 200 section tire, but any larger should have a wider rim. The 200 will make it steer slower than a 190, but if that doesn't bother you, is should be OK. Any wider and the 6" rim will pinch the profile into an unintended shape with possible negative consequences depending on if you ride like you hair's on fire or just cruise down to Hooter's for Bike Night once a week.

If you raise or lower the rear wheel, watch the pitch change at the rake and trail points. The steering input will change from washing out fast to not steering fast enough to this and that, etc. So upsetting the geometry lowering the bike, raising the front or back in all directions to a tire's aspect ratio and that footprint about to add more sketchy input to Hootersandshit here comes a corner I'm too fast for it! If I could only steer it now!

The height of a 200/50 is 100 mm and the height of a 190/55 is 104.5 mm, so the narrower tire is actually taller and raises the rear end more than the wider one. A 190/50 is 95 mm tall and is the normal tire on most 6" rimmed bikes. A 200/55 is 110 mm tall, but there are only a couple of brands who make them.
