I have converted std headers on two bikes purely because of budget, and here is what I experienced. Unfortunately I never took any photos of the 2009.
On my 2009 zx14 I cut it at the Y and put a plate over the hole and welded it close. Removed the cat at the same time. Changed the canister. I got better sound, but now had a backfire and rumble on decel. Blocked off the pair system. This removed the rumble and most of the backfire.
I didn't like the look ( it looked like home DIY job) and wanted it neater so had an exhaust place cut it off where all four header pipes meet at the bottom and put on a new pipe making it 4-1? I lost power low/midrange power. I then had a look at what other manufacturers were doing and had it converted with two "y" pieces from the 4 pipes to 4-2-1. I put an Akropovic canister from my Hayabusa on with a PCV 5 and gained 12 horse power.
I ran this until I sold her. As far as I know the new owner is still running it like this.
On my current 2014 ZZR 1400 I have an O2 sensor so cut it just behind the O2 sensor and had a pipe made to fit with a Stealth canister. I put a PCV and auto tuner on. My last dyno run ran at 195 hp. Whilst this is fair by zx14 standards, there is a science to exhaust flow, pipe diameter, back pressure etc. the other issue is that you have to run stainless from the original headers if you want to weld anything onto them. This means heavier set up than titanium. However you could run a brand name mid pipe and canister as I did on my 2009. I would recomend if budget allows go for a full system straight off. Less hassles. I am looking at putting a full system on as well.
