A lot of this just comes down to practice, saddle time. If you want to go fast you'll figure it out with time IMHO.

To a point. There's a reason there are so many schools, and most are rated highly as to how much is learned. Most are track oriented, but a lot translates to street riding. Things like smooth downshifting using brake/throttle/clutch, panic stops, traction limits, etc... helped me a lot. Easier to learn while an instructor is watching/evaluating/filming/leading, than reading a book or watching a dvd. A lot more fun too.
